I have a a few bags of Tobascos, Habeneros ,Cayennes,and Scorpians I'm thawing.. do they have to be completely thawed before I put them in a dehydrator ? Just gonna make a few jars of pepper flakes? Any quick help? Thank you!

When you thaw out frozen peppers they tend to get mushy  but if you are going to dry them in the oven or dehydrator do it as soon as possible.  I have not had a problem doing it.   If they are not completely thawed, it will take longer to get to the point to be able to grind them into flakes.

I often freeze peppers before dehydrating them, read that freezing ruptures the cell walls letting the water evaporate faster during drying.
